Ingredients

2 ripe bananas, mashed

1 cup Greek yogurt (choose vanilla for sweetness or plain for less sugar)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup almond flour (or substitute with your favorite nut flour)

1/4 teaspoon baking powder

1/4 teaspoon ground cinnamon

1/4 cup honey or maple syrup (adjust according to your desired sweetness)

1/4 cup dark chocolate chips or chopped nuts (optional but recommended for added texture)

A pinch of salt

Instructions

Prepare the Banana Mixture: In a medium mixing bowl, use a fork to thoroughly mash the ripe bananas until smooth and creamy. Add in the Greek yogurt, vanilla extract, honey or maple syrup, and a pinch of salt. Mix all ingredients together until completely combined and smooth.

Combine Dry Ingredients: In a separate bowl, sift together the rolled oats, almond flour, baking powder, and ground cinnamon. Stir the mixture well until all the dry ingredients are evenly distributed.

Combine Wet and Dry Mixtures: Gradually incorporate the dry mixture into the banana-yogurt mixture, stirring gently until a thick and cohesive batter forms. If you’re adding chocolate chips or nuts, gently fold them into the batter at this stage.

Shape the Cookies: Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper. Using a spoon or a cookie scoop, portion out tablespoons of the cookie dough onto the prepared sheet, leaving a little space between each dollop to allow for spreading while baking.

Bake the Cookies: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cookies turn golden brown and appear firm. Once baked, remove them from the oven and let them cool on the baking sheet for about 5 minutes. Afterward, transfer the cookies to a wire rack to cool completely.

Assemble the Sandwiches: Once the cookies have cooled, take one cookie and spread a generous tablespoon of Greek yogurt (you can mix a bit of honey for extra sweetness if desired) on the flat side. Place another cookie on top to create a sandwich. Continue this process until all cookies have been transformed into delicious sandwiches.

Freeze to Firm Up: Arrange the assembled cookie sandwiches in an airtight container. Place them in the freezer and allow them to freeze for a minimum of 2 hours, which will help them firm up for perfect texture.

Serve and Enjoy: Before serving, take the sandwiches out of the freezer about 5 minutes in advance to allow them to soften slightly, making them easier to bite into. Savor this scrumptious and healthier frozen treat!
