1 cup raw almonds, roughly chopped

1 cup dark chocolate chips (at least 70% cocoa)

½ cup almond butter

1 teaspoon vanilla extract

¼ teaspoon sea salt

¼ teaspoon ground cinnamon (optional)

Flaky sea salt for finishing

Prepare the Mixture: In a large mixing bowl, combine the chopped Medjool dates, roughly chopped raw almonds, almond butter, vanilla extract, sea salt, and ground cinnamon (if using). Stir thoroughly until the ingredients form a sticky and cohesive mixture.

    Shape into Discs: With your hands, take small portions of the mixture and roll them into disc shapes, approximately 1 to 1.5 inches in diameter. Place the shaped discs onto a parchment-lined baking sheet, ensuring they are pressed together firmly for compactness.

      Freeze the Discs: Transfer the baking sheet to the freezer. Allow the discs to freeze for about 30 minutes, or until they are firm and set.

        Melt the Chocolate: While the discs are chilling, prepare the chocolate coating. In a microwave-safe bowl, melt the dark chocolate chips in 20-second intervals, stirring after each interval until completely smooth. Be cautious not to overheat the chocolate, as it can become seizing.
