Ingredients

2 cups fresh pineapple, finely chopped

1 cup coconut milk (either canned or from a carton)

1/4 cup honey or maple syrup (adjust according to your preferred sweetness)

1/2 cup unsweetened shredded coconut

2 tablespoons fresh lime juice (preferably squeezed)

1 teaspoon vanilla extract

A pinch of salt

Additional shredded coconut for coating (optional)

Instructions

Prepare the Pineapple: Begin by placing the chopped pineapple and lime juice in a blender. Blend until the mixture is smooth, but if you prefer a bit of texture, you can leave some small chunks. Once blended to your liking, set the pineapple mixture aside.

Mix the Coconut Base: In a separate mixing bowl, whisk together the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until all ingredients are smoothly combined and well incorporated.

Combine the Mixtures: Gently fold the blended pineapple into the coconut mixture using a spatula. Then, add the unsweetened shredded coconut, mixing until everything is evenly distributed.

Pour and Freeze: Transfer the mixture into a lined 9x5 inch loaf pan or silicone molds, smoothing the top with a spatula to create an even surface.

Freeze: Cover the loaf pan with plastic wrap, then place it in the freezer. Allow the mixture to freeze for at least 4-6 hours, or until it is completely solid.

Cut into Bars: After the mixture is frozen solid, remove it from the pan. If you are using a loaf pan, you can easily lift it out using the overhanging plastic wrap. Place the block on a cutting board and slice it into individual bars.

Coat (Optional): For an extra delicious touch, roll each bar in additional shredded coconut to enhance both texture and flavor.

Serve and Store: Enjoy the bars immediately, or if you prefer, return them to the freezer until you’re ready to serve. These delightful bars can be stored in an airtight container for up to two weeks for later enjoyment.
