2 cups fresh pineapple chunks (frozen pineapple is also an option)

1 can (13.5 oz) full-fat coconut milk

1/4 cup honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon pure vanilla extract

1 tablespoon fresh lime juice

A pinch of salt

Optional: toasted coconut flakes for garnish

Instructions
 

Blend the Base: In a high-speed blender, add the fresh or frozen pineapple chunks, full-fat coconut milk, honey or maple syrup, vanilla extract, fresh lime juice, and a pinch of salt. Blend on high speed until the mixture is completely smooth and creamy. Taste the blend and adjust the sweetness by adding more honey or syrup if desired.

    Prepare Molds: Carefully pour the blended mixture into popsicle molds. Make sure to leave a small gap at the top of each mold to allow for the mixture to expand as it freezes. If your mold includes popsicle sticks, insert them following the instructions that come with the molds.

      Freeze: Position the molds in the freezer and let them freeze for a minimum of 4-6 hours, or until the pops are solid. For the best texture and flavor, it's advisable to freeze them overnight.

        Unmold and Serve: To easily remove the pops from the molds, hold them under warm running water for a few seconds. This will loosen them up, allowing you to gently pull them out. If you're feeling a bit indulgent, roll the pops in toasted coconut flakes for an extra touch of tropical goodness.
