Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to taste for sweetness)

Zest of 1 large lemon

Juice from 2 large lemons

1 cup fresh or frozen raspberries (if using frozen, ensure they are thawed)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and a pinch of salt. Using a whisk, mix these ingredients together until they form a smooth and creamy consistency.

Incorporate Raspberries: Gently fold the raspberries into the yogurt mixture. For a more uniform texture, consider lightly mashing some of the raspberries with a fork before adding them. Alternatively, leave them whole to create delightful bursts of flavor in each slice.

Line the Pan: Take an 8x8-inch baking dish and line it with parchment paper. Make sure to leave some overhanging paper on the sides to facilitate easy removal of the frozen yogurt later.

Spread the Mixture: Carefully pour the yogurt and raspberry mixture into the prepared baking dish. Use a spatula to spread it evenly, ensuring it reaches all corners with a smooth top.

Freeze: Transfer the baking dish to the freezer. Allow it to freeze for at least 4 to 6 hours, or until the yogurt is completely set and firm to the touch.

Slice and Serve: After the yogurt has frozen, remove the dish from the freezer. Use the overhanging parchment paper to lift the solid yogurt slab out of the dish. Place it on a cutting board and cut into squares or slices, depending on your preference.

Garnish and Enjoy: For a touch of freshness, garnish each slice with a sprig of mint leaves. Serve the yogurt slices immediately or store any leftovers in an airtight container in the freezer for up to two weeks.
