Ingredients

2 cups rolled oats

1 cup almond flour (or substitute with whole wheat flour)

1/2 cup brown sugar

1/2 cup coconut oil, melted (or unsalted butter, if preferred)

1 teaspoon ground cinnamon

1/4 teaspoon salt

2 cups Greek yogurt (plain or vanilla flavored)

2 medium apples, peeled, cored, and finely diced (approximately 2 cups)

1/4 cup maple syrup (or honey as an alternative)

1 teaspoon vanilla extract

1/2 teaspoon ground nutmeg

Optional: Chopped nuts for topping (such as pecans or walnuts)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a 9x9 inch baking dish (or a similar size) with parchment paper, making sure to leave some paper hanging over the edges for easier removal later.

Prepare the Base: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, melted coconut oil, ground cinnamon, and salt. Use a spatula or wooden spoon to mix until the ingredients are thoroughly combined and the mixture has a texture similar to wet sand.

Create the Crust: Take about two-thirds of the oat mixture and firmly press it into the bottom of the lined baking dish. Ensure that it forms an even layer to serve as the sturdy base for your bars.

Prepare the Filling: In a separate medium bowl, mix together the Greek yogurt, finely diced apples, maple syrup, vanilla extract, and ground nutmeg. Stir well until the apple pieces are evenly coated with the yogurt mixture.

Assemble the Bars: Pour the apple yogurt filling over the pressed oat crust in the baking dish, spreading it out evenly. Next, sprinkle the remaining oat mixture on top of the apple filling to create a delightful crumbly topping. For an added crunch, feel free to sprinkle some chopped nuts on top as well.

Bake the Bars: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the topping is golden brown and the filling has set slightly.

Cool and Freeze: After baking, remove the dish from the oven and allow the bars to cool in the dish for about 10-15 minutes. Then, transfer the dish to the refrigerator to cool completely. Once fully chilled, move the bars to the freezer and freeze them for at least 2 hours to allow them to firm up properly.

Slice and Serve: When ready to enjoy, carefully lift the bars out of the baking dish using the parchment overhang. Slice into squares or rectangles according to your preference. These bars can be enjoyed straight from the freezer for a refreshing treat or allowed to thaw for a few minutes for a softer consistency.
