Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon pure vanilla extract

1 cup shredded unsweetened coconut, toasted

1/2 cup chopped nuts (such as almonds or walnuts)

1/2 cup chocolate chips (choose dark or semi-sweet)

A pinch of sea salt

Fresh fruit for topping (optional; berries or banana slices work wonderfully)

Instructions

Toast the Coconut: Preheat your oven to 350°F (175°C). Evenly spread the shredded coconut over a baking sheet. Place it in the oven and toast for about 5-7 minutes, stirring halfway through to ensure it browns evenly without burning. Once golden brown, remove from the oven and allow to cool completely.

Prepare the Yogurt Base: In a large mixing bowl, combine the plain Greek yogurt, honey or maple syrup, pure vanilla extract, and a pinch of sea salt. Using a spatula or spoon, mix thoroughly until the ingredients are smooth and fully incorporated.

Fold in Additional Ingredients: Once the toasted coconut has cooled, gently fold in half of the toasted coconut and the chopped nuts into the yogurt mixture. Stir until everything is evenly distributed. Set aside the remainder of the toasted coconut and nuts to use as toppings.

Form Clusters: Using a spoon or a small ice cream scoop, drop spoonfuls of the yogurt mixture onto a parchment-lined baking sheet. Aim for clusters that are roughly the size of a golf ball, ensuring they have some height for a nice presentation.

Add Chocolate Chips: Lightly press a few chocolate chips into the top of each yogurt cluster. Follow this by sprinkling the reserved toasted coconut and chopped nuts over each mound to add texture and flavor.

Freeze the Clusters: Carefully place the baking sheet into the freezer. Allow the clusters to freeze for at least 3 hours, or until they are completely solid.

Serve and Enjoy: Once fully frozen, gently remove the clusters from the baking sheet. You can savor them right away or transfer them to an airtight container for storage in the freezer, making for a delightful and healthy snack. For an extra treat, consider topping each cluster with fresh berries or banana slices before serving.
