1 lb (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to desired spiciness)

1 tablespoon freshly squeezed lemon juice

Salt and freshly ground black pepper, to taste

1 cup jasmine rice (or your choice of rice)

2 cups chicken or vegetable broth

2 tablespoons fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving)

Optional: 1/4 cup peas (for added color and texture)

Instructions
 

Cook the Rice: In a medium saucepan, bring 2 cups of chicken or vegetable broth to a rolling boil. Once boiling, add 1 cup of jasmine rice. Bring it back to a gentle boil, then reduce the heat to low. Cover the saucepan and simmer for about 15-18 minutes until the rice is tender and all the liquid has been absorbed. Once done, fluff the rice with a fork and set it aside.

    Prepare the Shrimp: While the rice is cooking, take a paper towel and pat the shrimp dry to remove excess moisture. Season the shrimp evenly with salt and freshly ground black pepper.
