Ingredients

1.5 lbs pork tenderloin

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 tablespoon olive oil (plus more for searing)

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 tablespoon Dijon mustard

1 tablespoon balsamic vinegar

½ teaspoon red pepper flakes (optional for added heat)

Zest of 1 lemon

Juice of 1 lemon

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) so it's hot and ready for roasting when the tenderloin is prepared.

Prepare the Marinade: In a medium mixing bowl, combine the minced garlic, chopped rosemary, thyme, parsley, 1 tablespoon of olive oil, salt, black pepper, Dijon mustard, balsamic vinegar, red pepper flakes (optional), lemon zest, and lemon juice. Stir the mixture thoroughly until it forms a cohesive paste.

Marinate the Pork: Place the pork tenderloin into a large zip-lock bag or a shallow dish. Pour the garlic herb marinade over the pork, ensuring it is fully coated. Massage the marinade into the meat for even flavor distribution. Seal the bag or cover the dish and refrigerate for at least 30 minutes, allowing the flavors to infuse (up to 2 hours for deeper flavor).

Sear the Tenderloin: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once the oil is shimmering, carefully remove the pork from the marinade, letting any excess marinade drip off. Sear the tenderloin in the skillet for 3-4 minutes on each side, creating a beautiful golden-brown crust.

Roast the Pork: Carefully transfer the skillet to your preheated oven. Roast the pork tenderloin for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accurate results.

Rest the Meat: Once the pork is cooked, remove the skillet from the oven. Transfer the tenderloin to a cutting board and tent it loosely with aluminum foil. Allow it to rest for 5-10 minutes; this helps retain the juices for a tender and flavorful meat.

Serve: Slice the rested pork tenderloin into 1-inch thick medallions. Drizzle any remaining juices from the skillet over the slices for additional flavor. For an elegant touch, garnish with extra fresh herbs. This dish pairs beautifully with sides such as roasted seasonal vegetables or creamy mashed potatoes.
