1.5 lbs fingerling potatoes, halved lengthwise

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Lemon wedges, for serving

Preheat the Oven: Set your oven to 425°F (220°C). For hassle-free clean-up, line a baking sheet with parchment paper.

    Prepare the Potatoes: In a large mixing bowl, combine the halved fingerling potatoes with the olive oil. Add in the minced garlic, dried thyme, smoked paprika, and season generously with salt and freshly cracked black pepper. Toss everything together until each potato half is thoroughly coated with the mixture.

      Spread the Potatoes: Place the seasoned fingerling potatoes cut-side down on the prepared baking sheet. Make sure they are arranged in a single layer to promote even roasting.

        Roasting Phase 1: Roast the potatoes in the preheated oven for about 20-25 minutes, or until they develop a golden brown color and are tender when tested with a fork.
