2 cups cooked chicken, shredded

1 cup mashed potatoes (preferably cooled)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated cheese (cheddar or mozzarella works best)

1/4 cup fresh parsley, finely chopped

1/2 teaspoon paprika

1/2 teaspoon black pepper

Salt to taste

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko recommended for extra crispiness)

Vegetable oil for frying

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, mashed potatoes, finely chopped onion, minced garlic, grated cheese, chopped parsley, paprika, black pepper, and salt. Mix thoroughly until all ingredients are evenly incorporated and the mixture is smooth.

    Shape the Croquettes: Using a tablespoon, scoop out some of the chicken mixture and shape it into a small oval or log, about 2 inches long. Place the formed croquettes on a plate and continue shaping until all the mixture is used.

      Set Up Breading Stations: Arrange three shallow dishes in a row to create a breading station. Put the all-purpose flour in the first dish, the beaten eggs in the second, and the panko breadcrumbs in the third.

        Bread the Croquettes: Take each shaped croquette, roll it in the flour first to coat it evenly, then dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the croquette in the breadcrumbs until thoroughly coated, ensuring every part is covered for maximum crunch.
