Grilled Corn Salad with Lime Dressing

4 large ears of fresh corn, husked

1 medium red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for desired spiciness)

1 ripe avocado, diced

1 cup fresh cilantro, roughly chopped

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

Juice of 2 limes

Zest of 1 lime

Salt and freshly ground black pepper, to taste

Instructions
 

Begin by preheating your grill to medium-high heat to ensure it’s hot enough for grilling the corn.

    While the grill heats up, brush the husked ears of corn lightly with olive oil and season them generously with salt and freshly ground black pepper.

      Once the grill has reached the desired temperature, place the corn directly onto the grill grates. Grill the corn for approximately 10-15 minutes, turning it occasionally to ensure even charring and cooking. The kernels should be tender and have nice grill marks. After grilling, remove the corn from the grill and allow it to cool slightly for safe handling.

        When the corn has cooled enough to handle, use a sharp knife to carefully cut the kernels off the cob. Transfer the fresh corn kernels to a large mixing bowl.

          In the bowl with the corn, add the diced red bell pepper, halved cherry tomatoes, finely chopped red onion, minced jalapeño, diced avocado, and chopped cilantro. Mix them together gently.

            In a separate small bowl, whisk together the olive oil, freshly squeezed lime juice, lime zest, and a pinch of salt and pepper until well combined.

              Pour the zesty lime dressing over the salad mixture and toss everything together gently, making sure all ingredients are evenly coated.

                Finally, sprinkle the crumbled feta cheese over the top of the salad and give it one last gentle toss to incorporate the feta.

                  Serve the salad immediately for the freshest flavors, or cover and refrigerate it for about 30 minutes to allow the flavors to meld beautifully.
