1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 small ripe pineapple, peeled, cored, and sliced into rings

2 green onions, finely chopped (for garnish)

Marinate the Chicken: In a medium bowl, combine the teriyaki sauce, grated ginger, minced garlic, sesame oil, rice vinegar, and honey (if using). Whisk well to create a flavorful marinade. Set aside 1/4 cup of the marinade for later basting. Place the chicken thighs in a zip-top plastic bag or a shallow dish, and pour the remaining marinade over them.
