2 medium sweet potatoes, peeled and cut into small cubes

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

2 cups vegetable or chicken broth

2 tablespoons olive oil

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (or adjust to taste)

1/4 teaspoon freshly ground black pepper

1 teaspoon dried oregano

Fresh cilantro or parsley, chopped (for garnish, optional)

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and chopped bell pepper. Cook, stirring occasionally, until they are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes, stirring until fragrant.

    Brown the Turkey: Push the sautéed vegetables to one side of the pot and add the ground turkey. Cook the turkey, breaking it apart with a wooden spoon, until it’s browned and cooked through, approximately 5-7 minutes.

      Incorporate Sweet Potatoes: Once the turkey is browned, add the diced sweet potatoes to the pot. Stir everything together to thoroughly combine the turkey and sweet potatoes with the vegetables.
