1 cup dried green or brown lentils, rinsed

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 zucchini, diced

1 cup diced tomatoes (canned or fresh)

6 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper, to taste

2 cups fresh spinach or kale, roughly chopped

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 3-4 minutes until the onion is translucent.

    Add the Vegetables: Stir in the carrots, celery, and red bell pepper. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.

      Incorporate Zucchini and Spices: Add the diced zucchini, lentils, dried oregano, ground cumin, smoked paprika, and bay leaf. Stir well to combine.

        Add Liquids: Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat to low.

          Simmer: Cover the pot and let the soup simmer for about 25-30 minutes, or until the lentils are tender. Stir occasionally and check the consistency; add more broth or water if you prefer a thinner soup.

            Finish the Soup: Once the lentils are tender, add the chopped spinach (or kale) and cook for an additional 5 minutes. Remove the bay leaf, then season with salt, pepper, and lemon juice to taste.
