Ingredients

1 boneless turkey breast (approximately 4-5 pounds)

1 cup unsalted butter, softened to room temperature

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

1 tablespoon lemon zest (from 1 lemon)

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1 cup low-sodium chicken broth

1 tablespoon olive oil

A handful of fresh herb sprigs (rosemary, thyme, and sage) for garnish

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C) and allow it to preheat fully.

Make the Herb Butter: In a medium mixing bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, and sage, along with the lemon zest, salt, and black pepper. Using a fork or spatula, blend the mixture thoroughly until all the ingredients are evenly combined. Set the herb butter aside.

Prepare the Turkey: Take your turkey breast and pat it dry with paper towels to remove excess moisture. Carefully slide your fingers under the skin of the turkey breast to loosen it without tearing. This creates a pocket where you can place the buttery mixture.

Butter Up the Turkey: Use half of the prepared herb butter to spread evenly underneath the loosened skin of the turkey breast, ensuring it covers the meat well. Then, take the remaining herb butter and rub it generously all over the outer surface of the turkey breast.

Season and Sear (Optional): For an extra touch of flavor and a crispy skin, heat the olive oil in a large skillet over medium-high heat. Carefully place the turkey breast skin-side down in the skillet and sear for about 3-4 minutes, or until the skin is golden brown. While this step is optional, it adds a delightful texture and depth of flavor.

Roast the Turkey: Transfer the turkey breast to a roasting pan and add the low-sodium chicken broth around it. This will help keep the turkey juicy and flavorful during roasting. Loosely cover the turkey breast with aluminum foil and roast it in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Rest the Turkey: After roasting, remove the turkey breast from the oven and let it rest on a cutting board for about 15-20 minutes. This resting period is crucial as it allows the juices to redistribute, ensuring each slice is succulent and tender.

Serve: Carve the turkey breast into thick slices and serve drizzled with the pan juices for added flavor. Garnish each plate with fresh herb sprigs for a vibrant and appealing presentation.
