1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup extra-virgin olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon sweet paprika

Salt and freshly ground black pepper, to taste

1 small red onion, cut into wedges

1 bell pepper (red or green), cut into 1-inch squares

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to using)

Prepare the Marinade: In a spacious mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, thyme, rosemary, sweet paprika, salt, and black pepper. Whisk the ingredients together until the mixture is well combined and emulsified.

    Marinate the Chicken: Add the cubed chicken thighs to the marinade, ensuring each piece is evenly coated. Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to penetrate the chicken. For a richer flavor, marinate overnight.

      Prepare the Skewers: If using wooden skewers, immerse them in water for 30 minutes to prevent them from burning on the grill. Meanwhile, preheat your grill or a grill pan over medium-high heat until hot.
