1 lb boneless, skinless chicken thighs, diced

4 cups low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 cup frozen peas

1 tsp dried thyme

1 tsp dried parsley

Salt and pepper to taste

2 tbsp olive oil

2 tbsp butter

_For the Dumplings:_

2 cups all-purpose flour

1 tbsp baking powder

1 tsp salt

1 cup milk

1/4 cup melted butter

1 tbsp fresh parsley, chopped (optional, for garnish)

Sauté the Aromatics: In a large pot, heat olive oil and butter over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Chicken: Add the diced chicken to the pot. Season with salt, pepper, thyme, and parsley. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.

      Add Vegetables and Broth: Stir in the sliced carrots and celery, then pour in the chicken broth. Bring the mixture to a gentle boil, reduce the heat, and let it simmer for about 10 minutes.

        Make the Dumplings: While the stew is simmering, combine the flour, baking powder, and salt in a mixing bowl. Stir in the milk and melted butter until just combined. Do not overmix; the batter should be slightly lumpy.

          Drop in Dumplings: After the simmering time, gently drop spoonfuls of the dumpling batter onto the top of the stew. They should float on top, and it’s okay if they're not perfectly shaped.

            Cook the Dumplings: Cover the pot with a lid and let the dumplings cook for an additional 8-10 minutes. Do not lift the lid during this time to ensure the dumplings steam properly.
