1 teaspoon dried oregano

1 teaspoon dried thyme

2 lbs russet potatoes, peeled and cut into 1-inch cubes

4 garlic cloves, peeled

½ cup sour cream

¼ cup milk (adjust as needed for consistency)

4 tablespoons unsalted butter
