4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa or rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup black beans, drained and rinsed

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by setting your oven to 375°F (190°C) to preheat while you prepare the ingredients.

    Prepare the Peppers: With a sharp knife, carefully cut the tops off each bell pepper. Remove the seeds and white membranes inside. Lightly coat the exterior of the peppers with olive oil for added flavor and place them upright in a baking dish.

      Cook the Turkey Filling: In a large skillet, heat the 2 tablespoons of olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for approximately 3-4 minutes, or until the onion becomes translucent. Add the minced garlic and continue cooking for another minute, stirring frequently to prevent burning.

        Brown the Turkey: Increase the heat to medium-high and add the pound of ground turkey to the skillet. Use a spatula to break apart the meat as it cooks. Brown the turkey completely, cooking for about 5-7 minutes until no pink remains.

          Mix the Filling Ingredients: Reduce the heat to medium once the turkey is thoroughly cooked. Stir in the diced tomatoes (after draining), black beans, your choice of cooked quinoa or rice, chili powder, cumin, smoked paprika, salt, and pepper.
