Ingredients

1 cup natural, unsweetened peanut butter (choose either smooth or crunchy for texture)

1/4 cup coconut oil (melted)

1/4 cup powdered erythritol (or your preferred keto-friendly sweetener)

1 teaspoon pure vanilla extract

1/2 cup sugar-free dark chocolate chips (or roughly chopped sugar-free dark chocolate)

A pinch of fine sea salt

Instructions

Prepare the Muffin Tin: Begin by lining a muffin tin with paper liners to prevent the cups from sticking. Alternatively, silicone molds can be used, which allows for easy and non-stick removal.

Make the Peanut Butter Mixture: In a medium-sized bowl, combine the natural peanut butter, melted coconut oil, powdered erythritol, vanilla extract, and sea salt. Use a whisk or spatula to mix these ingredients together until the mixture is smooth and well-blended.

Melt the Chocolate: Place the sugar-free dark chocolate chips into a microwave-safe bowl. Heat them in the microwave in 30-second intervals, stirring well after each interval. Continue this process until the chocolate is completely melted and smooth, ensuring not to overheat.

        Assemble the Cups:

          - Spoon approximately 1 tablespoon of the melted chocolate into the bottom of each muffin liner or silicone mold. Use the back of a spoon to spread it evenly across the base.

            - Transfer the muffin tin to the freezer for about 10 minutes to allow the chocolate to set and become firm.

Add the Peanut Butter Layer: Once the bottom chocolate layer is firm, take about 1-2 tablespoons of the peanut butter mixture and scoop it onto the chocolate. Gently spread it into an even layer, making sure it does not overflow the edges.

Top with More Chocolate: Pour another tablespoon of the melted chocolate over the peanut butter layer in each cup, ensuring it completely covers the peanut butter. Tap the muffin tin gently on the countertop to help the chocolate settle smoothly on top.

Freeze Again: Return the muffin tin to the freezer for an additional 20-30 minutes, allowing the cups to harden completely.

Serve: Once the cups are fully set, carefully peel them away from the liners or molds. For optimal texture and freshness, store the cups in an airtight container in either the refrigerator or freezer.
