Ingredients

1 lb ground turkey

1 cup finely chopped spinach (fresh or thawed from frozen)

1 cup grated zucchini (excess moisture squeezed out)

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely diced onion

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1/2 tsp paprika

1/2 tsp salt

1/4 tsp freshly cracked black pepper

1 cup marinara sauce (for serving)

Fresh basil leaves (optional, for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Combine Ingredients: In a large mixing bowl, add the ground turkey, chopped spinach, grated zucchini, whole wheat breadcrumbs, grated Parmesan cheese, diced onion, minced garlic, egg, dried oregano, paprika, salt, and black pepper. Use a fork or your hands to thoroughly mix these ingredients until evenly combined.

Shape the Meatballs: With clean hands or using a cookie scoop, form the mixture into small meatballs approximately 1 inch in diameter. You should yield around 20 meatballs. Ensure they are uniform in size for even cooking.

Bake the Meatballs: Place the meatballs on the lined baking sheet, giving them enough space to prevent sticking. Bake in the preheated oven for 18-20 minutes. They should be cooked through and sporting a lovely golden-brown color when done.

Heat the Marinara Sauce: While the meatballs are baking, pour the marinara sauce into a small saucepan. Heat it over medium heat, stirring occasionally, until warmed through.

Serve the Meatballs: Once the meatballs are finished baking, serve them with the warmed marinara sauce. You can either drizzle the sauce over the meatballs or serve it on the side for dipping. For an elegant touch, garnish with fresh basil leaves if desired.

Enjoy Together: This is not just a meal; it’s an experience! Let the little ones help plate their meatballs or toss them with their favorite pasta. Enjoy this hearty and nutritious meal together as a family!
