8 oz (225g) pasta of your choice (fettuccine or penne work beautifully)

1 cup (250g) fresh ricotta cheese, ideally at room temperature for easy mixing

1 cup (150g) green peas (fresh or frozen)

2 tablespoons extra virgin olive oil

2 cloves garlic, minced finely

Zest and juice of 1 large lemon, preferably organic for the best flavor

1/4 cup (60ml) vegetable broth or reserved pasta water

1/4 cup (25g) freshly grated Parmesan cheese

Salt and freshly cracked pepper, to taste

Fresh basil or mint leaves, for vibrant garnishing

Optional: A pinch of red pepper flakes, for those who enjoy a bit of heat

Cook the Pasta: Start by boiling a large pot of salted water. Add the pasta and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water for later use. Once cooked, drain the pasta and set it aside.

    Sauté the Garlic: In a large skillet set over medium heat, pour in the olive oil. Heat the oil until it shimmers, then add the minced garlic. Sauté for about 1 minute, stirring constantly, until fragrant and golden. Be cautious to avoid burning the garlic.

      Add the Peas: Stir the green peas into the skillet with the garlic. Cook while stirring for 2-3 minutes until the peas are tender and vibrant. If using frozen peas, ensure they are heated through completely.

        Combine the Ingredients: Reduce the heat to low and add the drained pasta into the skillet. Follow by adding the fresh ricotta cheese, lemon zest, lemon juice, and the vegetable broth or reserved pasta water.
