Ingredients

4 medium-sized sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika (for a deeper flavor)

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup black beans (canned, rinsed, and drained)

1 cup corn (canned or frozen, thawed)

1 cup cherry tomatoes, halved

1 ripe avocado, sliced into wedges

1 cup shredded cheddar cheese (or dairy-free cheese)

¼ cup sliced pickled jalapeños (optional for heat)

¼ cup fresh cilantro, chopped for garnish

1 lime, cut into wedges for serving

Sour cream or Greek yogurt, for topping (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it reaches the proper temperature while you prepare the rest of the ingredients.

Prepare the Sweet Potatoes: Scrub the sweet potatoes thoroughly under running water to remove any dirt. Slice each sweet potato into 1/4 inch thick rounds, and then cut the rounds into quartered pieces to create bite-sized chunks.

Season the Sweet Potatoes: In a large mixing bowl, combine the sweet potato pieces with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, and a generous pinch of salt and pepper. Toss the mixture until all the sweet potatoes are evenly coated with the seasoning.

Bake the Sweet Potatoes: Spread the seasoned sweet potato pieces in a single layer on a baking sheet lined with parchment paper for easy cleanup. Bake in the preheated oven for 25-30 minutes, flipping them halfway through the cooking time, until they are tender and crispy around the edges.

Prepare the Toppings: While the sweet potatoes are baking, take a moment to prepare your toppings. In a medium bowl, gently mix together the black beans, corn, halved cherry tomatoes, and pickled jalapeños (if you’re adding them). Set this mixture aside to marinate slightly while the sweet potatoes finish baking.

Layer the Nachos: Once the sweet potatoes are done baking, take them out of the oven. On a large serving platter or in a baking dish, layer the roasted sweet potato pieces evenly. Generously sprinkle the shredded cheese over the top to create a melty layer.

Add the Toppings: Distribute the black bean and corn mixture evenly over the cheesy sweet potatoes. Place the platter back into the oven for another 5-7 minutes, or until the cheese is fully melted and bubbly.

Garnish and Serve: After the cheese has melted, carefully remove the nachos from the oven. Top with slices of avocado and a sprinkle of fresh cilantro. Serve warm alongside lime wedges for squeezing over, and offer sour cream or Greek yogurt on the side for a delightful creamy topping if desired.
