1 cup mango puree (fresh or canned)

1/2 cup packed brown sugar

1/4 cup soy sauce (low-sodium recommended)

1/4 cup apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon ground ginger

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Prepare the Turkey: Begin by preheating your oven to 325°F (165°C). Remove the turkey from its packaging and take out the giblets from the cavity. Rinse the turkey under cold water and pat it dry thoroughly with paper towels. Generously season both the inside and the exterior of the turkey with salt, ensuring an even distribution.

    Make the Mango Glaze: In a medium saucepan set over medium heat, combine the mango puree, brown sugar, soy sauce, apple cider vinegar, and Dijon mustard. Add the ground ginger, garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper if you like some heat. Stir continuously and bring the mixture to a gentle simmer.
