1/4 cup chopped pecans (optional, for added crunch)

Fresh parsley, finely chopped (for a fresh garnish)

Preheat the Oven: Set your oven to 425°F (220°C) to allow it to warm up while you prepare the cauliflower.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, maple syrup, balsamic vinegar, garlic powder, smoked paprika, and a generous pinch of salt and pepper. Use your hands or a spatula to toss the florets until they are evenly coated in the flavorful mixture.

      Spread on a Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking and aid in cleanup. Arrange the coated cauliflower florets in a single, even layer on the sheet, ensuring they are not overcrowded for optimal roasting.

        Roast the Cauliflower: Place the baking sheet in the preheated oven. Roast the cauliflower for 25 to 30 minutes, flipping the florets halfway through the cooking time. The cauliflower should be tender and have golden brown, crispy edges when done.

          Add the Pecans: If you choose to use pecans, sprinkle the chopped pieces over the cauliflower during the last 5 minutes of roasting. This will toast the pecans, enhancing their flavor and adding a delightful crunch to the dish.
