For the Chicken:

1 lb boneless, skinless chicken breasts, cut into thin strips

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

For the Vegetables:

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, sliced

1 tablespoon olive oil

Salt and pepper, to taste

For the Cilantro Lime Rice:

1 cup long-grain white rice

2 cups water or chicken broth for more flavor

Juice of 1 lime

Zest of 1 lime

¼ cup fresh cilantro, finely chopped

Salt, to taste

To Serve:

Sliced avocado

Fresh lime wedges

Sour cream or Greek yogurt (optional)

Instructions
 

Prepare the Cilantro Lime Rice:

    - Begin by rinsing the rice under cold water until the water runs clear. This removes excess starch and helps the rice cook evenly.

      - In a medium saucepan, combine the rinsed rice and water or chicken broth. Bring this mixture to a boil over medium-high heat.

        - Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and all the liquid has been absorbed.

          - After cooking, remove the saucepan from heat and let it rest, covered, for an additional 5 minutes.

            - Fluff the rice with a fork and then gently stir in the lime juice, lime zest, chopped cilantro, and salt. Set aside to keep warm.

              Marinate the Chicken:

                - In a large mixing bowl, combine the sliced chicken with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice.

                  - Mix thoroughly to ensure the chicken is evenly coated in the marinade. Allow it to marinate for at least 15 minutes, which allows the flavors to absorb while you prepare the vegetables.

                    Cook the Vegetables:

                      - Heat a large skillet over medium heat and add the olive oil. Once heated, add the sliced bell peppers and onions.

                          Cook the Chicken:

                            - In the same skillet, add the marinated chicken strips. Cook for approximately 6-8 minutes, stirring occasionally until the chicken is golden brown and cooked through, with no pink remaining in the center.

                              Assemble the Bowls:

                                - To serve, divide the warm cilantro lime rice among serving bowls. Top each bowl with a generous portion of the sautéed vegetables and the cooked chicken.

                                  Garnish and Serve:

                                    - Finish off each bowl by adding slices of creamy avocado, a squeeze of fresh lime juice over the top, and a dollop of sour cream or Greek yogurt if desired.
