Ingredients

1 cup fresh broccoli florets, finely chopped

1 cup shredded cheddar cheese (choose between sharp or mild based on your taste)

2 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ cup unsalted butter, cold and cut into small cubes

⅔ cup milk

1 large egg, beaten (for egg wash)

Extra shredded cheese for topping (optional)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Broccoli: In a small pot, bring salted water to a boil. Carefully add the finely chopped broccoli florets and blanch them for about 2 minutes. Immediately drain and transfer the broccoli into a bowl of ice water to halt the cooking process. Once cooled, drain again thoroughly and set aside.

Combine the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, and garlic powder until everything is evenly combined.

Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, blend the ingredients together until the mixture resembles coarse crumbs, with some larger pieces of butter still visible.

Add Milk and Cheese: Gradually pour in the milk and fold in the shredded cheddar cheese. Use a spatula to gently combine, being careful not to overmix; you want the dough to remain light and fluffy.

Incorporate the Broccoli: Carefully add the blanched broccoli florets to the dough and fold them in until they are evenly distributed throughout.

Form the Biscuits: Lightly dust a clean surface with flour, then turn the dough onto the surface. With floured hands, shape the dough into a thick rectangle (about 1 inch in height). Cut it into small squares or use a biscuit cutter to make rounds, approximately 1 to 2 inches in diameter.

Egg Wash and Cheese: Place the mini biscuits on the prepared baking sheet. Using a brush, apply the beaten egg wash to the tops for a beautiful golden color. If desired, sprinkle extra shredded cheese on top for added flavor.

Bake: Bake the biscuits in the preheated oven for 15-18 minutes, or until they are golden brown and the cheese on top is bubbling deliciously.

Cool and Serve: Let the mini broccoli cheddar biscuit bakes cool for a few minutes on a wire rack before serving them warm. They’re perfect as a snack, a delightful appetizer, or a tasty side with soups!
