Ingredients

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon garlic powder

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1 cup water (adjust as needed)

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1/2 cup diced bell peppers (choose from red, green, or yellow)

1/2 cup finely chopped mushrooms

1/4 cup black olives, sliced

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven:

    - Begin by preheating your oven to 425°F (220°C). While the oven heats up, prepare a baking sheet by lining it with parchment paper to prevent sticking.

      Prepare the Dough:

        - In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, garlic powder, dried oregano, and dried basil. Stir the dry ingredients until evenly mixed.

          - Gradually add the water and olive oil to the dry mix, stirring continuously until a soft and cohesive dough forms. If the dough feels too sticky, add a little more flour; if it’s too dry, incorporate more water, a tablespoon at a time.

            Shape the Pizza Bites:

              - Lightly dust a clean work surface with flour. Turn the dough out onto the floured surface and knead gently for about one minute until smooth.

                - Divide the dough into small pieces, rolling each into a ball approximately the size of a golf ball.

                  - Press each ball down to form a disc about 1/4 inch thick.

                    Assemble the Pizza Bites:

                      - Arrange the flattened dough discs on the prepared baking sheet, leaving a small space between each.

                        - Top each disc with a thin layer of shredded mozzarella cheese, then evenly distribute the diced bell peppers, chopped mushrooms, black olives, and halved cherry tomatoes over the cheese.

                          - If you're using Parmesan, sprinkle some on top of the veggies for an extra layer of flavor.

                            Bake:

                              - Carefully place the baking sheet in the preheated oven. Bake for 12-15 minutes, or until the edges of the dough have turned a lovely golden brown and the cheese is bubbling and lightly browned.

                                Garnish and Serve:

                                  - Once baked, remove the mini pizza bites from the oven and let them cool for a few minutes on the baking sheet.

                                    - If desired, garnish with fresh basil leaves for a pop of color and flavor.

                                      - Serve warm as delightful appetizers or a fun snack!
