1 pound shredded cooked chicken (such as rotisserie chicken)

1 cup black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 cup salsa (choose mild or spicy based on your taste preference)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

12 small tortillas (approximately 6-inch size)

Olive oil or cooking spray for greasing

Fresh cilantro and lime wedges for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Tortilla Cups:

      - Take a standard muffin tin and lightly coat each cup with olive oil or cooking spray to prevent sticking.

        - Gently press one tortilla into each muffin cup, ensuring it forms a cup shape that covers both the bottom and the sides. If you find it difficult to shape the tortillas, you can use a smaller round object, like a shot glass, to assist.

          - Place the muffin tin in the preheated oven and bake the tortilla shells for about 10 minutes, or until they turn golden and crispy. Once done, remove them from the oven and let them cool for a few minutes.

            Make the Filling:

              - In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, half of the cheddar cheese, and the salsa. Add in the cumin, chili powder, garlic powder, onion powder, and season with salt and pepper to taste. Stir well until all ingredients are fully mixed and integrated.
