1 ½ cups almond flour

½ cup coconut flour

¼ cup melted coconut oil

¼ cup maple syrup (or honey)

2 tbsp honey or agave syrup (adjust based on sweetness preference)

1 tbsp fresh lime juice

1 tsp fresh mint, chopped (plus extra for garnish)

Zest of 1 lime

          - Line a baking sheet or a clean flat surface with parchment paper. Place the prepared dough onto the parchment.

            - With your hands or a rolling pin, flatten and spread the dough into a circular shape approximately 1/4 inch thick, ensuring to create a slight lip around the edges to contain the filling.

              Chill the Crust:

                - Transfer the crust to the refrigerator and chill for about 30 minutes. This will help it firm up while you prepare the filling.

                  Prepare the Watermelon Filling:

                    - In a large bowl, gently toss the cubed watermelon with honey (or agave syrup), lime juice, chopped mint, and lime zest.
