1 lb ground beef

1 cup long-grain white rice, thoroughly rinsed

1 medium onion, finely diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon paprika

1 teaspoon ground cumin

1 teaspoon Italian seasoning

Salt and freshly ground pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 4-5 minutes until they are softened and fragrant. Stir in the minced garlic and continue cooking for another minute until the garlic is aromatic.

    Brown the Beef: Move the sautéed vegetables to one side of the pan, making space for the ground beef. Add the ground beef to the pan, breaking it apart with a spoon as it cooks. Continue to cook until the meat is browned and no longer pink, about 5-7 minutes. If there is excess grease, drain it from the pan.

      Add Rice and Seasoning: Mix in the rinsed rice, followed by the paprika, cumin, and Italian seasoning. Stir well to ensure the rice is evenly coated in the spices and combined with the beef and vegetables.

        Combine Ingredients: Pour the undrained diced tomatoes into the skillet along with the beef broth. Stir to combine everything. Season the mixture with salt and pepper to taste. Bring this mixture to a gentle boil, then reduce the heat to low.

          Simmer and Cook: Cover the pan with a lid and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to avoid any sticking to the bottom of the pan.

            Add Cheese: Once the rice has cooked and absorbed the liquid, sprinkle the shredded cheddar and mozzarella cheese evenly over the top. Cover the pan again and let it sit on low heat for about 5 minutes, allowing the cheese to melt and bubble deliciously.

              Serve: Once the cheese is melted and gooey, remove the skillet from heat. Garnish with freshly chopped parsley for a pop of color and freshness. Serve hot, straight from the pan for a comforting meal!
