1 lb ground beef

1 cup uncooked long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium heat.

    Cook the Beef: Add the ground beef to the skillet and break it up with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.
