One-Pan Cheesy Beef and Vegetable Casserole

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 medium bell pepper, diced (any color)

1 cup zucchini, diced

1 cup carrots, diced

1 can (14.5 oz) diced tomatoes, drained

1 cup frozen corn

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 cups uncooked elbow macaroni

3 cups beef broth

2 cups shredded cheddar cheese

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C) for the final baking step.

    Cook the beef: In a large oven-safe skillet or saucepan over medium heat, add the ground beef. Cook until browned, breaking it up with a wooden spoon (about 5-7 minutes). Drain excess fat if needed.

      Sauté vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté for about 3-4 minutes until softened.

        Add more veggies: Stir in the diced zucchini and carrots, cooking for another 3 minutes until they start to soften.

          Combine remaining ingredients: Add the drained diced tomatoes, frozen corn, Italian seasoning, paprika, salt, and pepper. Stir well to combine.

            Add pasta and broth: Sprinkle in the uncooked elbow macaroni gracefully into the mixture. Pour the beef broth over everything and give it a gentle stir to evenly distribute the ingredients.

              Bring to a simmer: Increase the heat to high and bring the mixture to a simmer. Once bubbling, reduce the heat to low and cover the skillet. Let it simmer for about 10 minutes, stirring occasionally, until the pasta is al dente.

                Add cheese: Remove the lid and sprinkle 1.5 cups of shredded cheddar cheese evenly over the top. Stir gently to incorporate the cheese into the casserole.

                  Bake: Transfer the skillet to the preheated oven. Bake uncovered for 15-20 minutes, until the cheese is bubbling and golden.

                    Garnish and serve: Once out of the oven, garnish with fresh chopped parsley, if desired. Let it cool for a few minutes before serving.
