1 lb boneless, skinless chicken breasts, diced

1 cup uncooked long-grain white rice

2 cups chicken broth

1 cup broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup cream of mushroom soup (or homemade equivalent)

1 small onion, diced

2 cloves garlic, minced

1 tsp paprika

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the pan: In a large, oven-safe skillet or casserole dish, heat the olive oil over medium heat. Add the diced onions and sauté for about 2-3 minutes until they become soft and translucent.

      Cook the chicken: Add the diced chicken to the skillet. Season with salt, pepper, paprika, and Italian seasoning. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned on all sides but not fully cooked through.

        Combine the ingredients: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Add the uncooked rice, chicken broth, broccoli florets, cream of mushroom soup, and 1 cup of shredded cheddar cheese. Mix until well combined.
