One-Pot Cheesy Beef and Rice Casserole

1 pound ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

2 cups beef broth

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1/2 cup sour cream (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, heat over medium heat. Add the ground beef and cook until it is nicely browned, about 5-7 minutes. Use a wooden spoon to break the meat apart as it cooks. Once browned, drain any excess fat from the pot.

    Sauté the Vegetables: To the pot with the beef, add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are softened and fragrant.

      Combine Ingredients: Stir in the rinsed rice, canned diced tomatoes (including their juice), kidney beans, beef broth, chili powder, cumin, smoked paprika, and a sprinkle of salt and pepper. Stir well to combine. Increase the heat to bring the mixture to a gentle boil.

        Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 18-20 minutes. Stir occasionally to prevent the rice from sticking to the bottom. The rice should be tender and most of the liquid should be absorbed by the time it's done.

          Add Cheese & Cream: Remove the pot from heat. Stir in 1 1/2 cups of the shredded cheddar cheese along with the sour cream (if using) until everything is evenly mixed. The warmth of the casserole will help the cheese melt beautifully into the mixture.
