1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon smoked paprika

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon black pepper

2-4 tablespoons flour (choose between chickpea or all-purpose flour)

Zest of 1 lemon

Olive oil spray for greasing

For the Tahini Sauce:

1/4 cup tahini

2 tablespoons lemon juice

1 garlic clove, minced

2-4 tablespoons water (to adjust consistency)

Salt to taste

Optional: A pinch of cayenne pepper for heat

Instructions

Preheat the Oven: Begin by setting your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Blend the Ingredients: In a food processor, combine the rinsed chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, smoked paprika, baking powder, salt, black pepper, and lemon zest. Pulse the mixture until all ingredients are well incorporated but still retain a slightly chunky texture.

Add Flour: Introduce 2 tablespoons of flour to the chickpea mixture. Pulse again to ensure everything is thoroughly mixed. If the mixture seems too wet, incorporate more flour one tablespoon at a time until the mixture holds together well without being sticky.

Shape the Falafel: Using your hands, form the mixture into small balls or patties, roughly 1.5 inches in diameter. Arrange these on the prepared baking sheet, leaving space between each for even cooking.

Bake the Falafel: Lightly mist the tops of each falafel with olive oil spray. Transfer the baking sheet to the preheated oven and bake for approximately 20 minutes. Be sure to flip the falafel halfway through the cooking time so they brown evenly, achieving a deliciously crispy exterior.

Prepare the Tahini Sauce: While the falafel is baking, whisk together the tahini, lemon juice, minced garlic, and a pinch of salt in a small bowl. Gradually add water, mixing until the sauce reaches your desired creamy consistency. For an extra kick, feel free to add a pinch of cayenne pepper.

Serve: After baking, allow the falafel to cool for a few minutes on the baking sheet. Serve them warm, drizzled with the tahini sauce or with it served on the side for dipping, creating a delightful and satisfying dish!

Prep Time: 15 mins | Total Time: 40 mins | Servings: 4 (approximately 12-15 falafel)

                  - Presentation Tips: For a beautiful presentation, serve the falafel on a colorful platter alongside fresh vegetable sticks and a small bowl of tahini sauce for dipping. Garnish with a sprinkle of chopped parsley or cilantro for a burst of color!
