Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs or breasts

3 tablespoons olive oil

2 cloves garlic, minced

Juice of 1 large lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

For the Pita Wraps:

4 whole wheat pita breads

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/2 red onion, thinly sliced

1 cup crumbled feta cheese

1/2 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, finely chopped

1 cup Greek yogurt or tzatziki sauce (for serving)

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper until well combined. Add the chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, or up to 2 hours to intensify the flavors.

Preheat the Oven: Set your oven to preheat at 400°F (200°C).

Bake the Chicken: Once the oven is heated, remove the chicken from the marinade and place it in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the chicken is fully cooked through and its internal temperature reaches 165°F (75°C). After baking, let the chicken rest for about 5 minutes before slicing into strips.

Prepare the Vegetables: While the chicken is in the oven, prepare the fresh toppings. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, halved Kalamata olives, and chopped parsley. Gently toss the mixture to ensure an even distribution of ingredients.

Assemble the Wraps: Take a warm pita bread and begin layering with a generous portion of the vegetable mixture. Top it off with sliced chicken and a drizzle of Greek yogurt or tzatziki sauce. Carefully fold the pita in half to enclose the fillings. Repeat this step for the remaining pita breads.

Serve and Enjoy: Serve the pita wraps immediately while they are warm. For an extra treat, provide additional Greek yogurt or tzatziki sauce on the side for dipping.
