1 large egg yolk

2 tablespoons ice water

1 cup bittersweet chocolate, finely chopped

1/2 cup heavy cream

1/4 cup granulated sugar

2 ripe pears, thinly sliced

1/2 cup roasted hazelnuts, roughly chopped

1 teaspoon vanilla extract

Pinch of salt
