Pineapple & Shrimp Salad Bowl

1 lb fresh shrimp, peeled and deveined

2 cups fresh pineapple, diced (about half a medium pineapple)

1 red bell pepper, finely chopped

1/2 red onion, thinly sliced

1 ripe avocado, diced

2 cups mixed greens (such as spinach and arugula)

1/4 cup fresh cilantro, chopped

2 tablespoons extra virgin olive oil

1 tablespoon honey (or agave syrup for a vegan version)

1 tablespoon fresh lime juice

Salt and freshly ground black pepper, to taste

Prepare the Shrimp: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the peeled and deveined shrimp. Season them generously with salt and freshly ground black pepper. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside to cool slightly.
