½ cup packed brown sugar

½ cup vegetable oil

2 large eggs

1 cup canned pure pumpkin puree

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened to room temperature

½ cup unsalted butter, softened to room temperature

3 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it lightly or lining it with parchment paper for easy removal of the bars later.

    Mix the Dry Ingredients: In a medium bowl, combine the flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt. Whisk together until the ingredients are evenly distributed. Set this mixture aside for later use.

      Combine Sugars and Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix using an electric mixer on medium speed until the mixture is well blended and smooth. Next, add the eggs, canned pumpkin puree, and vanilla extract. Continue to beat the mixture until it is creamy and uniform in texture.
