Ingredients

1 ½ cups all-purpose flour

½ cup powdered sugar

½ teaspoon salt

½ cup unsalted butter, softened to room temperature

1 teaspoon pure vanilla extract

1 cup canned pumpkin puree

¾ cup brown sugar, packed

2 large eggs, at room temperature

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon salt

½ cup heavy cream

1 cup pecans, roughly chopped

½ cup chocolate chips (optional, for added richness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by greasing it lightly, then line it with parchment paper, allowing some excess paper to hang over the edges for easy lifting after baking.

Make the Crust: In a medium mixing bowl, combine the all-purpose flour, powdered sugar, and ½ teaspoon of salt. Add the softened butter and vanilla extract, mixing with a fork or pastry cutter until the mixture resembles coarse crumbs. Press this crumbly mixture firmly and evenly into the bottom of the prepared baking pan to form the crust. Bake in the preheated oven for about 15 minutes or until the crust is lightly golden around the edges.

Prepare the Filling: In a large mixing bowl, blend the pumpkin puree, brown sugar, and the eggs until the mixture is smooth and well combined. Stir in the ground cinnamon, nutmeg, ginger, and salt. Gradually pour in the heavy cream, mixing continuously until the filling is smoothly incorporated.

Add Pecans: Carefully fold the chopped pecans and chocolate chips (if using) into the pumpkin filling mixture until evenly distributed.

Assemble and Bake: Pour the pumpkin filling evenly over the pre-baked crust, ensuring an even layer. Bake the assembled bars in the oven for 25-30 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.

Cool and Cut: Once baked, remove the pan from the oven and let it cool on a wire rack for about 10 minutes. Use the edges of the parchment paper to lift the entire block of bars out of the pan, then allow them to cool completely on the rack. After cooling, slice into 16 even bars for serving.

Serve: Enjoy your delightful Pumpkin Pecan Pie Bars either plain or with a dollop of whipped cream on top or a scoop of vanilla ice cream alongside for an extra indulgence!
