Pumpkin Spinach Frittata Muffins

1 cup cooked pumpkin puree (can use fresh or canned)

1 cup fresh spinach, chopped

6 large eggs

1/2 cup milk (dairy or non-dairy alternative)

1/2 cup crumbled feta cheese

1/3 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Olive oil or cooking spray (for greasing the muffin tin)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Prepare the Muffin Tin: Lightly grease a standard muffin tin with olive oil or cooking spray to prevent the muffins from sticking after baking.

      Combine the Base: In a large mixing bowl, whisk together the eggs and milk until the mixture is smooth and well blended. Add the cooked pumpkin puree and mix until fully incorporated.

        Add Seasonings and Cheese: Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper until evenly distributed. Carefully fold in the chopped spinach, crumbled feta cheese, and grated Parmesan cheese until the spinach and cheeses are uniformly mixed throughout the egg mixture.

          Fill the Muffin Cups: Divide the mixture evenly among the prepared muffin cups, filling each one about 3/4 full to allow room for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are puffed, golden, and a toothpick inserted into the center comes out clean.

              Cool & Serve: After baking, allow the frittata muffins to cool in the pan for about 5 minutes. Gently remove them and transfer to a wire rack to cool further. Enjoy them warm or at room temperature!
