1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 cup broccoli florets, bite-sized

1 cup sugar snap peas, ends trimmed

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

3 green onions, chopped (white and green parts separated)

Cooked rice or quinoa, for serving

Sesame seeds (optional, for garnish)

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix the ingredients thoroughly to ensure the beef is evenly coated. Let the beef marinate while you prepare the vegetables, about 10 minutes.

    Prepare the Veggies: Rinse and slice the red bell pepper into thin strips. Cut the broccoli into small, bite-sized florets, and rinse the sugar snap peas to remove any dirt. Mince the garlic and ginger, and chop the green onions, keeping the white parts separate from the green parts.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is shimmering, add the marinated beef in a single layer. Allow it to sear untouched for about 2 minutes, then stir-fry for an additional 2 minutes until the beef is browned and cooked through. Remove the beef from the pan and set it aside.
