Ingredients

1 pound ground beef

1 tablespoon taco seasoning (store-bought or homemade)

1 tablespoon olive oil

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded cheese (cheddar or Mexican blend)

¼ cup chopped fresh cilantro (for garnish)

For the Avocado Lime Sauce:

1 ripe avocado

Juice of 1 lime

1 clove garlic, minced

¼ teaspoon salt

2 tablespoons Greek yogurt or sour cream (optional for creaminess)

Water (to thin, if necessary)

Instructions

Prepare the Avocado Lime Sauce:

    - In a blender or food processor, combine the avocado, lime juice, minced garlic, salt, and Greek yogurt (if using). Blend until smooth.

      - If the sauce is too thick, add water a tablespoon at a time until the desired consistency is reached. Taste and adjust seasoning if needed. Set aside.

        Cook the Beef:

          - In a large skillet, heat olive oil over medium heat.

            - Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula. Drain excess fat if necessary.

              - Sprinkle the taco seasoning over the beef and stir to combine, adding a splash of water if it seems dry. Cook for another 2 minutes to allow flavors to meld.

                Warm the Tortillas:

                  - In a separate dry skillet, heat the tortillas over medium-high heat for about 30 seconds on each side until warm and slightly charred. Keep them warm in a clean kitchen towel or in a tortilla warmer.

                    Assemble the Tacos:

                      - Take a warm tortilla and spoon a generous amount of the seasoned beef into the center.

                        - Top with shredded lettuce, diced tomatoes, shredded cheese, and a drizzle of the avocado lime sauce.

                          Garnish and Serve:

                            - Finish with a sprinkle of chopped cilantro on top.

                              - Serve immediately with extra avocado lime sauce on the side for dipping!
