Quick Shrimp Tacos with Avocado Lime Sauce

For the Shrimp:

1 pound medium shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

8 small corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

For the Avocado Lime Sauce:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

Juice of 1 lime

1 small garlic clove (minced)

Salt and pepper to taste

Water, as needed for consistency

Prepare the Shrimp: In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until the shrimp are evenly coated. Let sit for about 10 minutes to absorb the flavors.

    Make the Avocado Lime Sauce: While the shrimp marinate, in a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth. If the sauce is too thick, add a little water, one tablespoon at a time, until you reach your desired consistency. Taste and adjust seasoning if necessary.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp. Cook for 2-3 minutes on each side, or until shrimp are pink and opaque. Remove from heat.

        Warm the Tortillas: In the same skillet or a separate one, warm the corn tortillas for about 30 seconds on each side, or until they are soft and pliable.

          Assemble the Tacos: Place a few shrimp in the center of each tortilla. Drizzle with the avocado lime sauce and top with fresh chopped cilantro.

            Serve: Squeeze a little lime juice over the tacos and serve immediately with extra lime wedges on the side.
