Ingredients

2 salmon fillets (about 6 ounces each)

1/4 cup teriyaki sauce

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

2 cups mixed vegetables (broccoli, bell peppers, snap peas, carrots)

1 tablespoon olive oil

Sesame seeds for garnish

Green onions, sliced (optional for garnish)

Instructions

Marinate the Salmon: In a small bowl, whisk together the teriyaki sauce, sesame oil, honey, garlic powder, ginger powder, sea salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them, making sure they are well coated. Let them marinate for at least 15 minutes (or up to 1 hour in the refrigerator if you have time).

Prepare the Vegetables: While the salmon is marinating, wash and chop your mixed vegetables into bite-sized pieces.

Cook the Salmon: Heat a non-stick skillet over medium heat. Remove the salmon from the marinade, leaving a bit of the sauce on it. Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, then carefully flip and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. Brush with the leftover marinade during the last minute of cooking for extra flavor.

Steam the Veggies: While the salmon is cooking, prepare a steamer pot or use a microwave-safe dish with a lid. If using the stovetop, fill the bottom of the steamer pot with water, bring it to a simmer, and place the mixed vegetables in the steamer basket. Steam for 4-5 minutes until bright and tender. If using a microwave, place the veggies in a bowl with a splash of water, cover, and microwave for 3-4 minutes.

Serve: On a plate, place the cooked salmon fillet and a generous side of steamed veggies. Drizzle any remaining teriyaki sauce over the salmon. Sprinkle with sesame seeds and sliced green onions for garnish if using.

Enjoy: Serve immediately and enjoy your delicious Quick Teriyaki Salmon with Steamed Veggies!
