2 large red bell peppers

8 oz goat cheese, softened to room temperature

1/2 cup cream cheese, softened

2 tablespoons sour cream

2 tablespoons olive oil

2 cloves garlic, finely minced

1 teaspoon fresh lemon juice

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (omit for less heat, or adjust to taste)

Salt and freshly ground black pepper, to taste

Fresh parsley or chives, finely chopped for garnish

Pita chips or an array of fresh vegetables, for serving

Roast the Peppers: Preheat your oven to 450°F (230°C). Arrange the red bell peppers on a baking sheet in a single layer. Roast them in the oven for approximately 25-30 minutes, turning them halfway through the cooking time. The peppers should become blistered and charred. Once done, remove them from the oven and place the peppers in a bowl; cover the bowl tightly with plastic wrap and let it steam for about 10 minutes. This steaming process will help with peeling the skin.

    Prepare the Peppers: After steaming, carefully remove the skins, stems, and seeds from the peppers. Chop the roasted red peppers into rough pieces and set them aside.

      Blend the Ingredients: In a food processor, add the chopped roasted peppers along with the softened goat cheese, cream cheese, sour cream, olive oil, minced garlic, lemon juice, smoked paprika, and cayenne pepper (if using). Blend the mixture until it reaches a smooth and creamy consistency, ensuring to stop and scrape down the sides of the processor as needed.

        Taste and Adjust: Before serving the dip, taste it and adjust the seasoning as desired. You may want to add additional salt, freshly ground black pepper, or lemon juice to enhance the flavors to your liking.
