1 1/4 cups vegetable broth or water

1 red bell pepper, diced

1 zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 small red onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and black pepper, to taste

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Optional: 1/4 teaspoon chili flakes for a spicy kick

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it reaches the right temperature for roasting.

    Prepare the Vegetables: On a large baking sheet, evenly spread out the diced red bell pepper, sliced zucchini, halved cherry tomatoes, and diced red onion. Drizzle the vegetables with olive oil, and generously sprinkle the dried oregano, garlic powder, salt, and black pepper. Using your hands or a spatula, toss everything together until the veggies are fully coated.

      Roast the Vegetables: Place the baking sheet in the preheated oven and roast the vegetables for about 25 to 30 minutes. Stir the mixture halfway through cooking to ensure they roast evenly and achieve a delightful caramelization.
