1 pound flank steak, sliced thinly against the grain

2 cups fresh broccoli florets

1 red bell pepper, sliced into thin strips

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece ginger, minced

3 tablespoons low-sodium soy sauce (divided: 2 + 1)

2 tablespoons oyster sauce

1 tablespoon cornstarch (for marinade)

1 tablespoon cornstarch (for sauce thickening)

1 tablespoon sesame oil

2 tablespoons vegetable oil (for cooking)

Salt and pepper, to taste

Cooked jasmine rice or noodles, for serving

Optional: sesame seeds and sliced green onions for garnish

Instructions
 

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced flank steak with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well to ensure the meat is evenly coated. Allow it to marinate for at least 15 minutes at room temperature to absorb the flavors.

    Prepare the Sauce: While the beef is marinating, whisk together the remaining 1 tablespoon of soy sauce, oyster sauce, and 1 tablespoon of cornstarch in a small bowl. If the sauce appears overly thick, add a splash of water to achieve a more liquid consistency. Set this sauce aside for later use.

      Blanch the Broccoli: Bring a pot of water to a rolling boil. Add the broccoli florets and blanch for about 2 minutes, until they turn bright green and are slightly tender. Immediately transfer the florets to an ice bath (a bowl of ice water) to halt the cooking process. Once cooled, drain and set aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Once the oil is shimmering, add the marinated beef in a single layer.           Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing briefly until fragrant (about 30 seconds). Then, add the sliced red bell pepper and snap peas. Stir-fry the vegetables for approximately 2-3 minutes until they are tender but still crisp.

            Combine and Thicken: Return the cooked beef to the skillet with the sautéed vegetables. Pour the prepared sauce evenly over the mixture and toss everything together gently. Allow it to cook for an additional 2-3 minutes until the sauce thickens and clings to the beef and vegetables.

              Finish and Serve: Remove the skillet from heat and drizzle the dish with sesame oil, stirring to incorporate all flavors. Serve the sizzling beef and broccoli over a bed of jasmine rice or noodles. For an attractive touch, garnish with a sprinkle of sesame seeds and sliced green onions.
